Ingredients

Quantity Ingredient
2 cups water
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 cups basmati rice, washed
80ml olive oil
4 onions, finely sliced
1/2 bunch coriander, finely chopped

Method

  1. Pour the water in a saucepan, add salt and pepper and bring to the boil. Then add the rice. Once water returns to the boil, cover and simmer on a low heat for 20 minutes, until cooked, then transfer to serving dish.
  2. Heat the oil in a frying pan and sauté the onions on a low heat until light brown. Arrange the fried onion on top of the rice and garnish with coriander.
