Vareniki can be made with a variety of fillings – either sweet or savoury. This recipe is for sweet vareniki.

Ingredients

Quantity Ingredient
salt
1 teaspoon olive oil
300ml sour cream

Dough

Quantity Ingredient
2 cups plain flour
1 cup boiling water
1/2 teaspoon salt

Filling

Quantity Ingredient
250ml full-cream continental cream cheese
2 tablespoons caster sugar
1/2 teaspoon vanilla essence

Method

  1. Combine flour, water and salt in a bowl to form a dough.
  2. To make the filling, combine the cheese, sugar and vanilla essence in a bowl and set aside.
  3. Divide the dough into 4–5 portions. On a lightly floured surface roll out each portion so that it is about 1 cm thick. Cut the dough into rounds using a standard glass, and put a heaped teaspoon of the filling in the centre of each round. Fold in half to form a semicircle, pressing the air out with your fingers. Pinch the edges of the dough to seal.
  4. Drop dumplings in several batches into a large saucepan of salted boiling water with a teaspoon of olive oil. Reduce the heat. Do not stir. When the vareniki rise to the surface, remove them from the water with a slotted spoon and drain in a colander. Serve hot with a dollop of sour cream.
