Mandarin sorbet with fresh fruits

Mandarins are in season during the coolest months of the year. This sorbet is lovely served with juicy pears, strawberries or papaya.

Ingredients

Quantity Ingredient
12 large mandarins
1 lemon, juiced
165g sugar
500g chopped fruit, such as pears, strawberries, kiwifruit or papaya
whipped cream, to serve

Method

  1. Peel the mandarins and place the segments in a food processor. Add the lemon juice and sugar and blend for a few seconds to break the segments into small pieces. Strain the juice, discarding the pulp and seeds.
  2. Pour the juice into an ice cream maker and churn until firm. Transfer the sorbet to a container, cover and place in the freezer for at least 2 hours.
  3. If you don’t have an ice cream maker put the juice in a metal bowl and place in the freezer. When the juice has hardened a little, remove from the freezer and whisk for a few seconds. Return the mixture to the freezer until it becomes more firm, then whisk again. Repeat this process until the mixture is too hard to whisk.
  4. To serve, place some of the chopped fruit in eight parfait glasses and top with a spoonful of sorbet. Add more fruit and serve with a little whipped cream on top.
