Make this flourless cake in the winter months when oranges are at their best. The first step is quite unusual as you need to simmer two whole oranges in water for 2 hours. After that, it’s a piece of cake!

Ingredients

Quantity Ingredient
2 unblemished oranges
235g blanched almonds
230g caster sugar
5 large eggs
1 teaspoon baking powder
icing sugar, for dusting

Method

  1. Wash the oranges and place in a saucepan. Cover with cold water and bring to the boil, then cover the pan and simmer for 2 hours. Top up the water during cooking when necessary. Drain the oranges and set aside to cool.
  2. Preheat the oven to 180°C. Butter a 20 cm round cake tin.
  3. Place the almonds and sugar in a food processor and blend until the almonds are in quite small pieces. Some of them will be finely ground. Transfer to a plate.
  4. Place the whole oranges in the food processor and blend to a purée. Add the almond mixture and briefly blend before adding in the eggs and baking powder and blending until smooth.
  5. Pour the mixture into the prepared tin and bake for 1 hour or until a bamboo skewer inserted into the middle comes out dry. Set aside for 10 minutes before turning out onto a wire rack.
  6. Serve the cake dusted with icing sugar.
