Turkish rice pilaf with dried figs and apricots

This rice dish is a real treat and a special taste sensation. It’s equally delicious eaten on its own or served as an accompaniment to grilled vegetables, fish or meat.

This dish can also be made in a rice cooker, in which case you’ll need to increase the quantity of stock to two cups and follow the instructions in your rice cooker manual.

Ingredients

Quantity Ingredient
1 tablespoon olive oil
1/2 onion, finely chopped
1/2 teaspoon cumin seeds
1 cardamom pod
1 teaspoon ground turmeric
1 cup basmati rice
1 1/2 cups Vegetable broth
or 1 1/2 cups * chicken broth [rid:11051]
1 red capsicum, seeded and finely diced
salt
freshly ground black pepper
3 dried apricots, finely diced
2 dried figs, finely diced
2 tablespoons pistachios, chopped
2 tablespoons coriander leaves

Method

  1. Heat the oil in a non-stick saucepan. Add the onion and cook for 2 minutes, stirring from time to time. Stir in the cumin, cardamom and turmeric and cook for 20 seconds. Add rice and stir well for 1 minute. Add the stock and capsicum, season with salt and pepper and bring to a slow simmer. Cover pan with a lid and cook over a low heat for 15–20 minutes. Check once or twice during the cooking and stir if necessary.
  2. Just before serving, add the diced apricots, figs, pistachios and coriander leaves. Stir briefly and serve straight away.
