In 2013, I hosted the UK premiere for The Great Chicken Wing Hunt, a documentary about a group of people in the US that go on a mission to find the world’s best Buffalo wing. The event raised money for the charity FoodCycle by asking for a small entrance fee. In return, guests received unlimited beers and a plethora of chicken wings. I asked some of my favourite food people, such as BAO, The Skinny Bib, Tomos Parry, Rita’s and On The Bab, to create a hot sauce. We trimmed 1000 chicken wings, fried them and covered them in everyone’s different sauces. Here is our F.A.T version from that night. It’s like a greedy all-in-one Buffalo wing, where the obligatory blue cheese dressing and celery stick are already in the sauce, so you can just scoff it up all at once!

Ingredients

Quantity Ingredient
vegetable oil, for deep-frying
12 chicken wings, trimmed, cut in half by the joint
90g unsalted butter
125ml see method for ingredients
1 tablespoon stilton or similar blue cheese
celery salt, to taste

Method

  1. Fill a deep fryer or large, heavy-based pan with vegetable oil and heat to 190°C.
  2. Carefully add the chicken wings, in batches, and fry for about 10 minutes until they’re crispy and golden. Use a slotted spoon or tongs to remove the wings from the oil and drain on paper towels.
  3. Melt the butter in a separate pan over low heat. Add the hot sauce and Stilton and celery salt, then stir until well combined and heated through.
  4. Place the wings in a bowl, pour over the sauce, and toss. Serve straight away.
