I think of this as a jazzed-up, cheesy ranch dressing. It is excellent with pickles, especially with the Pickled Nashi Pear, Sweet Fennel Pickles, Bourbon Pickled Okra, Cucumber Dill Pickles, Orange Blossom Carrots and Rose Radishes.

Ingredients

Quantity Ingredient
200ml buttermilk
100g stilton or similar blue cheese, crumbled
200ml soured cream
1 teaspoon mayonnaise
1 teaspoon tahini
4 tablespoons pickle of choice, very finely chopped, (Bourbon Pickled Okra and Pickled JalapeƱos are both good options)
1 tablespoon lemon juice
dash see method for ingredients
sea salt, to taste
freshly ground black pepper, to taste
olive oil, to drizzle
chives, to garnish
sesame seeds, to garnish

Method

  1. Put all the ingredients except the olive oil, chives and sesame seeds in a bowl and whisk together until smooth.
  2. Taste and check for seasoning.
  3. Drizzle with olive oil, and top with chives and sesame seeds.
