It’s really easy to make your own herb-flavoured vinegars. You can use them for pickling veggies or they make a nice and interesting change in a salad dressing too.

Ingredients

Quantity Ingredient
15 elderflower heads
500ml white wine vinegar

Method

  1. If your elderflower heads are freshly picked, give them a good shake to discard any little bugs.
  2. Pick the flowers from the stalks, pack them into a clean jar and cover them in the vinegar. Seal and refrigerate.
  3. After 2 weeks, pour the vinegar through a fine mesh sieve or muslin into a sterilised jar or bottle and store in a dark, dry place. Discard the strained flowers. It will keep for up to 2 months.
