What’s best: white or brown onion, red or spring onion? Do you prefer your onion caramelised or perhaps you are partial to a good onion chutney? Having tested a multitude of onion arrangements, this version tops it. Simple brown onion, sliced in half moons with a little British marinade.

Ingredients

Quantity Ingredient
1/2 small brown onion, finely sliced
1 tablespoon worcestershire sauce
1 tablespoon butter, at room temperature
2 slices granary or multiseed bread
60g mature cheddar, thickly sliced
freshly ground black pepper

Method

  1. Put the sliced onion in a bowl and stir in the Worcestershire sauce. Cover and leave to marinate for 10 minutes.
  2. Butter one side of each slice of bread and lay butter-side down.
  3. Put the cheese on one slice, then spoon the onions on top. Grind some black pepper over, then press the other slice over the onions, butter facing outwards.
  4. Heat a frying pan to a medium heat, then lay your sandwich in the pan. Cook for 3 minutes on each side or until the cheese is gooey and the outside is crisp. Alternatively, cook the sandwich in a toasted sandwich maker or a panini press. It is especially tasty served with brown sauce!
