Using flavoured raisin bread sets off this sweet, nutty, cheesy toastie beautifully. If you fancy making this fruity melt even more flavoursome, try adding a bit of blue cheese.

Ingredients

Quantity Ingredient
1 tablespoon clear honey, plus extra to serve
small pinch salt
60g walnuts, finely chopped
125g cream cheese
4 tablespoons butter, at room temperature
8 slices raisin bread
3 figs quartered
2 tablespoons light brown sugar

Method

  1. Preheat the oven to 180ºC and line a baking tray with baking parchment.
  2. Combine the honey and salt in a small bowl, add the walnuts and toss to coat them in the salted honey. Spread the walnuts in a single layer on the baking tray. Bake for 5–10 minutes until toasted, stirring halfway through to ensure they toast evenly. Remove from the oven and allow to cool.
  3. Whip the cream cheese in a small bowl until light and fluffy.
  4. Toast the slices of bread on a grill or in a toaster.
  5. To serve, spread each slice with the whipped cheese, lay the figs on top, then sprinkle over the toasted walnuts. Drizzle over some extra honey, then eat!
  6. Alternatively, you can also serve this as a traditional closed sandwich - just remeber to butter the outside of the bread. I like to sprinkle over some brown sugar before toasting the bread for a delicious caramelised flavour.
