Although key lime pie is a classic American dessert, we came up with this raw key lime-inspired recipe in Morocco. All the ingredients were right in front of us one morning at the market so it was simple for us to mix them all together into an ultra-creamy, sweet and tangy mousse. This would be a good dessert to serve at a non-formal party or brunch, as it’s very easy and quick to prepare any number of them a few hours ahead and then chill them in the fridge.

Ingredients

Quantity Ingredient
2 ripe avocados
2 limes, finely zested and juiced
6 fresh soft dates, stoned
1 pomegranate, seeds scooped out and separated

Method

  1. Cut the avocados in half. Remove the stone, use a spoon to scoop out the avocado flesh into a bowl and discard the skin and stones. Add the lime zest and juice and the dates. Use a hand blender to process until completely smooth, or blend all the ingredients in a food processor. Taste and add more lime or dates if needed.
  2. Spoon the mixture into 4 small serving glasses and chill for a few hours to firm slightly. Serve with a generous amount of pomegranate seeds piled on top. The mixture can be stored for a couple of days in the fridge in an airtight container then spooned into glasses just before serving.
