At first we kept this Middle Eastern and North African spice blend in our spice cabinet, but it quickly advanced up the ranks and got placed right next to the salt on our kitchen counter. We use it on roasted vegetables, in salads, on hummus or on soft-boiled eggs, but it can really be used on almost anything savoury. It adds a salty yet tangy twist. Add 1 tablespoon of ground cumin for really nice optional addition.

Ingredients

Quantity Ingredient
4 tablespoons sesame seeds
4 tablespoons ground sumac
2 tablespoons dried thyme
2 tablespoons oregano
1 pinch sea salt

Method

  1. Place the sesame seeds in a frying pan and gently toast over a low heat, stirring until lightly toasted (or you can use them raw). Remove from the heat and tip into a bowl immediately to prevent over-browning. Leave to cool then combine with the remaining ingredients. Transfer to an airtight glass jar. This spice blend will keep for months in a dark cupboard.
