What I really love about green juices is how fresh they are. I can’t understand how orange juice, apple juice and other purely fruit juices have reached such popularity, when, in fact, most juices taste so much better balanced with some greens or vegetables. I realize that it might seem exaggerated to squeeze three sorts of green juices in one small chapter, but they are all very different in flavour and we just couldn’t rule any out. One is fresh and sharp, one is entirely vegetable-based and thus not sweet at all, and one has a delicious tropical sweetness to it.

Luise

Sweet kale

Ingredients

Quantity Ingredient
60g kale, stems removed
2 small apples, cored
1/2 small fennel bulb, trimmed
1/2 small lemon, peeled and pips removed
1 knob fresh ginger, peeled

Method

  1. Wash all of the ingredients and chop them to fit your juicer.
  2. Feed all of the ingredients through the mouth of the juicer one by one, alternating between the fibrous (kale, ginger) and juicy (lemon) ingredients, while using the hard ingredients (apples, fennel) to push everything else through.
  3. Taste and adjust the flavours to your liking.
  4. Stir well, pour into a medium-sized glass and serve cold or store in a medium-sized sealable glass jar or airtight glass bottle (as featured in the photo) to take on the go.

Cleansing chlorophyll

Ingredients

Quantity Ingredient
60g spinach, stems included
20cm piece cucumber
1 celery stalk, with leaves
1 leaf chard, stem included
1 handful fresh parsley, stems included

Method

  1. Wash all of the ingredients and chop them to fit your juicer.
  2. Feed all of the ingredients through the mouth of the juicer one by one, using the hard ingredients (cucumber, celery) to push the fibrous ingredients (spinach, chard, parsley) through.
  3. Taste and adjust the flavours to your liking.
  4. Stir well, pour into a medium-sized glass and serve cold or store in a medium-sized sealable glass jar or airtight glass bottle (as featured in the photo) to take on the go.

Pineapple greens

Ingredients

Quantity Ingredient
250g ripe pineapple, peeled
60g spinach, stems included
60g lettuce
1/2 lime, peeled and pips removed
10 fresh mint leaves

Method

  1. Wash all of the ingredients and chop them to fit your juicer.
  2. Feed all of the ingredients through the mouth of the juicer one by one, alternating between the fibrous (spinach, lettuce, mint) and juicy (lime) ingredients, whilst using the hard ingredient (pineapple) to push everything else through.
  3. Taste and adjust the flavours to your liking.
  4. Stir well, pour into a medium-sized glass and serve cold or store in a medium-sized sealable glass jar or airtight glass bottle (as featured in the photo) to take on the go.
