Ingredients

Quantity Ingredient
5 tablespoons korean fermented chilli paste (gochujang)
4 garlic cloves, finely grated
3 tablespoons caster sugar
30g fresh ginger, peeled and finely grated
2 spring onions, white part only, thinly sliced
1 tablespoon freshly ground black pepper
60ml toasted sesame oil
12 fresh, thick slices of pork belly

Method

  1. Combine all the ingredients, except the pork, in a bowl and mix well. Add the pork slices and mix to cover completely in the marinade. Leave, covered, in the refrigerator for 1 hour.
  2. Preheat the oven to 180°C.
  3. Remove the pork from the refrigerator. Arrange the slices of pork, evenly spaced apart, on a non-stick baking tray. Cook for 25 minutes, turning the pork once during cooking
