Peanut butter, cheesy omelette + BLT toasted bagel

A huge thanks to talented pastry chef Nicole Liao – or Gin, as we call her – for showing me this neat cheese-wrapped-in-omelette technique, and for convincing me to try the surprising but delicious combo of peanut butter and a BLT. Who would have thought!

Ingredients

Quantity Ingredient
4 bagels
60g unsalted butter, softened
60g peanut butter
4 baby gem lettuce leaves, washed
8 cold smoked bacon rashers
2 small ripe truss tomatoes, thinly sliced
salt flakes
freshly ground black pepper
1 see method for ingredients

Method

  1. Preheat a grill to hot. Cut the bagels in half and toast them under the grill.
  2. Butter the bagels and thinly spread the peanut butter evenly on the bottom halves. Place the lettuce leaves on the peanut butter, then the bacon, followed by the tomato slices. Season the slices with salt and pepper and add the cheesy omelette square on top. Close the bagels with the top halves and serve immediately.

Pro tips

  • I’ve gone for a toasted sesame seed bagel here, which is just the right size to hold all of this together. Just a thin scraping of peanut butter will do to add a new dimension to this sandwich. The omelette is a great trick up any sandwich aficionado’s sleeve.
