Dark chocolate, Roquefort + vanilla cherries

Blue cheese and cherries work very well together but, with a good-quality dark chocolate, these crisp breads will be a finish to a meal that everyone will remember.

Ingredients

Quantity Ingredient
60ml light olive oil
100g block of good-quality, single origin dark chocolate, 65% cocoa
120g roquefort
125g see method for ingredients
1 baguette, cut diagonally into twelve 1 cm thick slices

Method

  1. Preheat a grill to hot. Drizzle the olive oil over the bread slices and place them on a baking tray lined with baking paper. Toast the slices well on both sides under the grill.
  2. Grate the chocolate evenly over one side of the slices. Crumble around 10 g of Roquefort on top of each slice with your fingers, top with the vanilla cherries and serve.

Pro tips

  • Make a big batch of the Vanilla cherries as they are sensational and work well as a quick dessert with ice cream. I prefer Roquefort for this recipe, but gorgonzola or Stilton work just as well.
