Another favourite Spanish dish of Abuelo‘s was this special cocido (stew). Abuela learned this recipe from La Gallega (meaning ‘the Spaniard‘), who was a celebrated Spanish-born chef from Veracruz. Serve with crusty bread or white rice.

Ingredients

1kg pork belly, cut into 6 pieces
1/2 teaspoon salt
80ml olive oil, plus extra for brushing
1 onion, finely chopped
6 garlic cloves, finely chopped
100g chorizo, sliced
2 large ripe tomatoes, chopped
2 flat-leaf parsley sprigs
1 mint sprig
6 capers
6 green olives, pitted and sliced
3 bay leaves
1 large potato, cubed
1 small green or red chilli, seeded and membrane removed

Method

  1. Place the pork belly in a large saucepan with 1 litre water and the salt over a high heat. Bring to the boil and then reduce the heat to low and simmer for 1 hour, or until the pork belly is tender and the liquid has reduced to about 500 ml. Remove the pork and set the stock aside.
  2. Preheat the oven to 170°C.
  3. Place the pork, fat side up, on a greased baking tray. Brush the top of the pork with the extra olive oil and bake in the oven for 1 hour or until golden.
  4. In a clean large saucepan, heat the oil over a medium heat and fry the onion and garlic until soft. Add the chorizo and cook for a further 5 minutes. Add the cooked pork and the remaining ingredients, except the potato and chilli, and cook for a further 2−3 minutes.
  5. Add the stock, potato and chilli and bring to the boil, reduce the heat to low and simmer for 10 minutes or until the potato is cooked. Serve hot.
