For the soup

Ingredients

Quantity Ingredient
2kg whole hen or chicken, jointed
2 white onions, quartered
4 garlic cloves, smashed
2 fresh or dried bay leaves
1 celery stalk, roughly chopped
2 cloves
1 teaspoon dried marjoram
7g coriander or flat-leaf parsley leaves
1.5 litres chicken stock
1 teaspoon white vinegar
2 cloves

For the chilli seasoning

Quantity Ingredient
60g lard
or 60ml olive oil
1 white onion, thinly sliced
2 garlic cloves, crushed
1 clove
3 black peppercorns
2 long red chillies, seeded and membranes removed
4 jalapenos, seeded and membranes removed, sliced
1 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1 fresh bay leaf
125ml water
1/2 teaspoon salt

For the vegetables

Quantity Ingredient
2 zucchini, roughly chopped
2 carrots, roughly chopped
3 potatoes, quartered
2 large plantains, cut into 4 pieces
3 corn cobs, sliced into thirds
80g pineapple pieces
1 green apple, cut into small dice

To serve

Method

  1. Place all the soup ingredients in a large saucepan or stockpot over a high heat and bring to the boil. Reduce the heat to low and allow to simmer until the chicken is just tender, about 1 hour.
  2. Remove the chicken from the stock. Strain the stock, using a fine sieve, into a clean saucepan or stockpot. Return the chicken to the pan and set aside.
  3. To prepare the chilli seasoning, heat the lard in a shallow frying pan over a medium heat. Add the onion and cook for a few minutes until translucent. Add the remaining ingredients, except the water and the salt. Cook for a further 5 minutes. Transfer the mixture to a blender with the water and salt and process until smooth.
  4. Add the chilli mixture to the chicken stock along with the vegetables and bring to the boil over a high heat. Reduce the heat to low and allow to simmer for about 15 minutes or until the potatoes are tender.
  5. Serve the broth with a squeeze of lime juice and crusty bread.
