Ingredients

Quantity Ingredient
500g ripe tomatoes, quartered
500g tomatillos, quartered
1/2 white onion, finely chopped
5 small red chillies, seeded and membranes removed if you prefer your salsa mild
or 3 habanero chillies, seeded and membranes removed if you prefer your salsa mild
2 garlic cloves, finely chopped
1 teaspoon lime juice
1 fresh bay leaf
1 teaspoon dried oregano

Method

  1. Place the tomatoes, tomatillos, onion and chillies in a small saucepan with 125 ml water over a high heat. Bring to the boil. Remove from the heat.
  2. Remove the skin from the tomatoes and place in a blender with the remaining ingredients. Blend until smooth. Season to taste and the sauce is ready to use.
