Ingredients

Quantity Ingredient
500g semi-firm white fish, such as sea bass or red snapper
3 lemons, juiced
2 teaspoons salt
2 large ripe tomatoes, chopped
1 small onion, finely chopped
15g coriander leaves, finely chopped
2 tablespoons red chilli, finely chopped
2 tablespoons olive oil
8 black olives, sliced, (optional)
1 small avocado, cubed
crackers, to serve
or corn chips, to serve

Method

  1. Dice the fish into 1 cm cubes.
  2. Toss the fish, lemon juice and salt in a non-metallic mixing bowl. Cover and marinate for 5 hours or overnight in the refrigerator.
  3. When ready to serve, combine the remaining ingredients, except the olives, avocado and corn chips, in a separate bowl.
  4. Drain the fish and discard the lemon juice.
  5. Combine the fish with the tomato mixture and place on a serving platter. Top with the olives, if using, and avocado and serve with the corn chips or crackers.
