Ingredients

Quantity Ingredient
160g raw peanuts, skin left on
220g sugar
125ml water
1/2 teaspoon natural vanilla extract
1-2 drops red food colouring

Method

  1. Place all the ingredients in a deep frying pan and bring to the boil over a medium–high heat, stirring constantly with a wooden spoon.
  2. Reduce the heat to low and allow to simmer for about 10–15 minutes while continuing to stir. The mixture surrounding the peanuts will become foamy at first and then dry, resembling sand.
  3. Keep stirring constantly until the sugar melts again and coats each peanut. This should take an extra 5 minutes.
  4. Remove from the heat and pour the peanuts on a tray lined with baking paper. Allow the peanuts to cool completely before storing them in an airtight container or cellophane bags. These will keep for 1 week.
