Ingredients

250g guavas, peeled
185ml water
1/2 lime, juiced
250g white sugar
1/2 egg white
queso fresco, to serve

Method

  1. Place the guavas in a blender or food processor with 60 ml of the water and the lime juice. Purée until smooth. Using a fine sieve or a piece of muslin (cheesecloth), strain the guava pulp, discarding the liquid, and place the pulp in a bowl. Set aside.
  2. Place the sugar and remaining water in a small saucepan over a medium heat. With a wooden spoon, stir until the sugar has dissolved and the syrup has reached the soft ball stage (112°C) on a candy thermometer.
  3. Add the guava pulp and continue cooking over a medium–high heat until the mixture thickens and the base of the pan can be seen when stirring, around 15–20 minutes.
  4. Pour the guava mixture into a bowl and allow to cool. When cool enough to handle, add the egg white and mix with clean hands until the mixture changes colour.
  5. Pour onto a baking tray lined with baking paper and allow to set for a few hours. Serve slices of the paste with queso fresco.
