Peppered steak burger with caramelised onion & horseradish cream

This is a bit of a fancy burger. The peppery charred flavour of the steak is offset by the sweetness of the caramelised onions and the tangy sharpness of the horseradish cream. The runny egg yolk just brings it all together perfectly.

Ingredients

Quantity Ingredient
4 x 120g beef eye fillets, butterflied
freshly cracked black pepper, for seasoning
olive oil, for drizzling and pan-frying
4 free-range eggs
4 Soft burger buns, cut in half
Clarified butter, melted, for brushing
1 quantity Caramelised onion
100g rocket leaves

Horseradish cream

Quantity Ingredient
125g creme fraiche or sour cream
2 tablespoons fresh grated horseradish, or bottled horseradish sauce
1 lemon, juiced

Method

  1. For the horseradish cream, place all the ingredients in a bowl and whisk together, to the consistency of firmly whipped cream. Be careful not to let the crème fraîche get too warm or it will not whip properly. Season with salt and freshly ground black pepper. Cover and reserve in the fridge.
  2. Heat a cast-iron grill pan, or barbecue, to a high heat. Heat a large non-stick frying pan over a medium heat.
  3. Generously season the steaks on both sides with sea salt and cracked black pepper, then lightly drizzle with olive oil. Cook on the grill for about 1 minute on each side for medium-rare. Rest the steaks on a rack for a minute.
  4. Meanwhile, add a little olive oil to the hot frying pan. Add the eggs and fry for about 2 minutes, until they have reached the sunny-side-up stage.
  5. While the steaks are resting, brush the insides of the buns with clarified butter and toast lightly on the grill, until light char marks appear. Now build your burgers.

Build from the bottom, in this order:

  • Bun bottom → Caramelised onion → Steak → Egg → Rocket → Bun top, generously spread with horseradish cream
