This nutty, citrusy mayo is found on Sondra, our tofu burger.

Ingredients

Quantity Ingredient
80g toasted sesame seeds
1 quantity Basic mayo
40ml soy sauce
40ml yuzu juice, (f unavailable, use a mix of lemon and mandarin juice)

Method

  1. In a food processor or blender, blitz the sesame seeds for 5–10 seconds to make a fine powder. Don’t blitz the seeds for too long, or they will heat up and the oil will come out and make them clumpy.
  2. Transfer the sesame powder to a bowl, then add the remaining ingredients and whisk until combined.
  3. Keep in an airtight container in the fridge for up to 2 weeks.
