Anchovy and cheese mash

The subtle background notes of anchovies and the nutty jarlsberg cheese add a surprising depth of flavour to this mash. It holds its own with a steak and a robust sauce, and is equally happy paired with salmon.

Ingredients

6 medium floury potatoes, peeled and cut into 3 cm (1¼ in) pieces, about 1 kg
1 garlic clove, peeled and left whole
1/2 teaspoon salt, for the cooking water
60 grams unsalted butter
3 anchovies
250ml full cream milk
195 grams grated jarlsberg or gruyère cheese
1 teaspoon chopped fresh rosemary leaves, plus extra to serve
1/2 teaspoon freshly ground black pepper
sea salt

Method

  1. Put the potatoes, garlic and salt in a small saucepan and cover with cold water. Bring to the boil over medium–high heat and boil until very tender, about 15 minutes, testing with the point of a sharp knife. Drain the potatoes and garlic, reserving 250 ml of the cooking water, and return them to the saucepan over low heat for 1 minute to ensure any excess water has evaporated. Mash until smooth.
  2. Meanwhile, melt the butter in a small saucepan over medium heat and add the anchovies, squashing them into the butter until almost dissolved. Whisk in the milk and stir until warmed but not boiling.
  3. With a wooden spoon, stir the milk mixture, jarlsberg, rosemary and pepper into the potatoes until smooth. Beat in enough of the reserved cooking water to give a creamy consistency, starting with 125 ml. Taste and add sea salt and more pepper if required.
  4. Transfer to a serving dish, scatter with extra rosemary leaves and serve immediately.
