Matcha is Japanese green tea powder. Its flavour is absolutely divine and it is packed up to the eyeballs with antioxidants.

Ingredients

Quantity Ingredient
120g dates
100g cashew nuts
65g shelled pistachios
1 heaped tablespoon coconut oil
2 heaped teaspoons matcha powder
desiccated coconut, for coating

Method

  1. Place all the ingredients except the desiccated (dried shredded) coconut in a food processor and pulse until a smooth, green, nutty dough has formed.
  2. Break off thumb-sized pieces of the dough and roll into balls. Roll the balls through the coconut to coat, then place on a plate and refrigerate for a few hours to set.
