Pitta pizzas are quick-fix gold. Out the pack, whack some bits on, under the grill, bang… Lunch. That’s what you need!

Ingredients

Quantity Ingredient
1 teaspoon tomato puree
1 wholemeal pitta bread
8 baby spinach leaves, torn
4-5 anchovy fillets
50g feta cheese

Method

  1. Preheat the grill to its highest setting.
  2. Spread the tomato purée over the pitta. Add the baby spinach, scattering it over. Lay the anchovy fillets haphazardly on top, then crumble over the feta cheese.
  3. Place under the grill for a few minutes, until the feta begins to brown at the edges, then serve.

Note

  • A great source of omega 3 fatty acids, carotenoids and soluble fibre.
