Oats are a great ingredient for heart health, thanks to the presence of the soluble fibre beta glucan. Oats and coconut are a marriage made in heaven. Give this one a bash!

Ingredients

Quantity Ingredient
50g porridge oats
200ml coconut milk
1/4 teaspoon stevia
3-4 drops vanilla extract
1 teaspoon desiccated coconut

Method

  1. Place the oats, coconut milk and stevia into a saucepan, pour in 100 ml of water and simmer for five to six minutes, until the oats are soft and a creamy texture has formed.
  2. Add the vanilla extract and desiccated coconut and stir well, before serving.

Note

  • This recipe is a good source of beta glucan and medium chain triglycerides, as well as being low GI.
