Beetroot, goat’s cheese and rocket tortilla pizza

This is a perfect short-cut quick-fix type affair. I like a tortilla pizza, as you get the same kind of pizza fix, but you don’t have about 20 cm of pure refined starch on your plate. The tortilla is so thin that it is little more than a carrier for other amazing ingredients.

Ingredients

Quantity Ingredient
2 teaspoons tomato puree
1 large wholemeal tortilla
1 large cooked beetroot, chopped
or 2 small cooked beetroot, chopped
70g goat’s cheese
1 tablespoon pine nuts
handful rocket leaves

Method

  1. Preheat the grill to its highest setting.
  2. Spread the tomato purée over one side of the tortilla. Top with the beetroot. Crumble over the goat’s cheese and sprinkle with the pine nuts.
  3. Place under the hot grill until the cheese is bubbling and beginning to brown on the edges.
  4. Place on a plate, then top with the rocket.

  • Best for constipation.
