Avocado, smoked salmon and spinach wrap with citrus mayo

This is great portable lunch that is much lighter than the usual ‘house brick’ sandwiches available. Packed with omega 3, iron and B vitamins.

Ingredients

Quantity Ingredient
2 tablespoons mayonnaise
1/2 lemon, juiced
freshly ground black pepper
1 large wholemeal tortilla wrap
3-4 slices smoked salmon
1/2 avocado, peeled and sliced
handful baby spinach

Method

  1. Mix the mayonnaise with the lemon juice and a little black pepper and set aside.
  2. Lay the tortilla wrap out and top with the smoked salmon and avocado.
  3. Spread over the lemon mayonnaise, then finish the wrap by adding the baby spinach, before rolling it tightly. Eat!

  • Best for IBD.
