These are an awesome mineral-packed low GI snack. You can’t eat just one.

Ingredients

Quantity Ingredient
200g raw cashew nuts
1 teaspoon runny honey
1/2 teaspoon curry powder
pinch salt

Method

  1. Preheat the oven to 170°C.
  2. Place the cashew nuts into a bowl and drizzle over the honey. Toss the cashews well to ensure they are evenly coated.
  3. Sprinkle over the curry powder and toss well again to make sure the cashews are all coated with curry powder.
  4. Place the coated cashews on a baking tray lined with greaseproof paper, place at the top of the oven and bake for 10–12 minutes until beginning to turn golden.
  5. Cool on the tray, sprinkle with salt, then transfer the nuts to an airtight container to store. If they last that long…
