Stuffed okra

This recipe varies from place to place but this is a version that I feel works very well indeed as a lovely starter or accompaniment. Make sure you dry the okra (ladies’ fingers) well after washing or they will become very gooey when you start to prepare them as they are naturally mucilaginous. Avoid thick, seedy-looking specimens as they will not become tender when cooked.

Ingredients

Quantity Ingredient
1/2 coconut, freshly grated
or 100g desiccated coconut
20-30 long, slender okra
salt, to taste
1/4 teaspoon ground turmeric
2 large green chillies, seeded, if liked, and finely chopped
1-2 tablespoons coriander leaves, chopped
1/2 teaspoon coriander seeds, finely crushed but not to a powder
1/2 teaspoon cumin seeds, finely crushed but not to a powder
2 teaspoons chaat masala
3-4 tablespoons sunflower or rapeseed oil

plain greek-style yoghurt

Method

  1. If using desiccated coconut, soak in 100 ml for 1 hour until soft and rehydrated and the liquid is absorbed.
  2. Split the washed and dried okra lengthways, but not right through, and season inside with a little salt and the turmeric.
  3. Blend the coconut and the remaining ingredients except the oil together and season lightly.
  4. Stuff the okra until they are swollen but do not let them tear (don’t worry if there is a little stuffing left over).
  5. Heat just enough oil to cover the base of a heavy frying pan and fry the stuffed vegetables until golden brown on both sides and the okra are tender. Alternatively, grease an oven-proof tray, lay the okra (stuffed side up), brush lightly with some oil and bake in the oven at a temperature of 140˚C, for 15 minutes. Sprinkle over any remaining stuffing and serve with thick yoghurt.
