Aam ki lassi

Mango yoghurt smoothie

Because we use such rich yoghurt, in summer, when the heat is intense, many Indians enjoy a good lassi (particularly mango or other fruit ones) instead of a meal (or they might just go for a light snack).

You can make other fruit lassis the same way, using a large handful of strawberries or raspberries, a peeled peach (with the stone removed), or a peeled, seeded papaya. You may like to sharpen your lassi with a squeeze of fresh lime juice, too.

Ingredients

Quantity Ingredient
1 fresh mango, peeled and flesh cut in pieces
120ml thick, plain whole milk yoghurt, chilled
4 ice cubes
chilled milk or water, (optional)
caster sugar, to taste (optional)

Method

  1. Put the prepared fruit in a blender with the yoghurt and ice cubes.
  2. Blitz until smooth and frothy. Sweeten to taste with sugar, if liked.
  3. Pour into a glass and sprinkle with mint or coriander if desired. Serve straight away.
