Shrikhand is a hugely popular Indian dessert. It is made across the length and breadth of the subcontinent. What may be different from region to region is the flavouring, the addition of nuts and the sweetness. It can be served with pooris or on its own. It’s very rich, so serve small portions!

Ingredients

Quantity Ingredient
500ml thick yoghurt
1 tablespoon milk
3-4 tablespoons caster sugar
1 teaspoon ground cardamom
1 teaspoon rose water
8-10 blanched almonds, sliced
8-10 blanched pistachios, sliced
1 tablespoon charoli or toasted pine nuts
pinch saffron strands

Method

  1. Place the yoghurt in a clean disposable kitchen cloth or muslin and tie the open ends loosely.
  2. Hang the bag now created over the kitchen sink or a bowl for 2–3 hours until all the liquid has drained. It can also be left in the refrigerator suspended over a bowl overnight if more convenient.
  3. Meanwhile, toast the saffron strands briefly in a small dry frying pan, tip into a cup and add the milk. Leave to infuse until the yoghurt is ready.
  4. Tip the drained curds into a large bowl and scrape off any bits sticking to the cloth. Beat well with a small whisk making sure you scrape the edges with a spatula and beat again until smooth. Beat in the sugar until it has completely dissolved.
  5. Sprinkle over the ground cardamom and mix it in.
  6. Now add the saffron milk and the rose water and taste. If you need more sugar then remove a little of the shrikhand and beat the sugar into that until dissolved then mix with the rest of the dessert.
  7. Transfer the mixture to an attractive serving bowl and sprinkle with the nuts. Chill well before serving.
