Method

  1. Rub 1 kg of unblemished green peaches with a handful of salt to remove the fuzz from their skins. Wash and rinse the peaches and dry them thoroughly. Keeping the fruit whole, place into a couple of large sterilised glass jars. Mix together 2 cupfuls of rice vinegar, 3 cups of cold water, cup of sugar and 2 teaspoons of salt and pour over the peaches, ensuring they’re covered with liquid. Weigh down with a saucer or some sort of weight to ensure this. Store in a cool place for at least a few days before using.
