If you want to ramp up the smokiness in this dish, roast the tomatillos in a dry pan until blackened, then blend.

Ingredients

Quantity Ingredient
2 jalapeno chillies, roughly chopped
2 large garlic cloves, peeled and crushed
1kg fresh tomatillos, husked, washed and sliced in half
1 shallot
1/2 avocado, stoned and diced
2 tablespoons coriander leaves, chopped
1 lime, juiced
1/2 teaspoon sea salt

Method

  1. Place the jalapeños, garlic, tomatillos and shallot in a blender and pulse until smooth. Add the avocado and some water if the mixture is too thick. Fold in the coriander, lime juice and salt.
