Ingredients

Quantity Ingredient
200ml extra-virgin olive or rapeseed oil
4 sprigs thyme, washed and dried
1/2 lemon, peeled

Method

  1. Bruise the herbs by whacking them on a table a few times.
  2. Heat the olive oil and thyme in a saucepan until small bubbles form on the surface of the oil. Allow to cool, add the lemon peel and transfer to a sterilized jar.
