Ingredients

Quantity Ingredient
200ml apple cider vinegar
2 tablespoons sugar
1 1/2 teaspoons maldon sea salt
100g habanero chillies
1 tablespoon mustard seeds

Method

  1. Bring the cider vinegar to a simmer in a pan and mix in the sugar and salt. While this is simmering, slice the habaneros into concentric rings. You can remove the seeds to decrease the heat, though they’ll still be very hot. Place the chillies in a Mason or pickling jar (or just an old jam jar) and pour over the vinegar mix. Leave to pickle for a few days before using.
