Ingredients

Quantity Ingredient
8-10 dried shiitake mushrooms
750g minced pork
6 spring onions, thinly sliced
4 eggs, lightly beaten
1 tablespoon fish sauce
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Garlic, chilli and fish sauce

Method

  1. Soak the mushrooms in hot water for 20–30 minutes. Drain well, then cut off and discard the mushroom stems and thinly slice the caps. Place in a bowl with the remaining ingredients and mix well to combine. Grease a loaf tin and pack the mixture firmly into it, cover with a double layer of baking paper or foil and steam over high heat for 1 hour or longer, or until well cooked. Allow to cool slightly in the tin until firm, then turn out, slice and serve with a lettuce salad and the garlic, chilli and fish sauce.
