Pork cooked with sugar

Ingredients

Quantity Ingredient
1-1.25kg pork belly or loin
2 tablespoons oil
3 spring onions, finely chopped
2 teaspoons sugar
1/2 teaspoon salt
pinch freshly ground black pepper, or to taste
2 tablespoons fish sauce

Method

  1. Cut the pork into large cubes — do not discard all of the fat as this adds flavour.
  2. Heat the oil in a large saucepan over low heat. Add the spring onion and cook until golden. Add the pork and stir-fry until the pork starts to change colour, then add the sugar, salt and pepper, and continue stirring until the meat is brown all over.
  3. Add 1 litre water to the pan and simmer for 1 hour. Add the fish sauce and continue to simmer until the pork is almost dry, taking care to stir frequently as the liquid reduces or the pork may burn. Serve with white rice.
