Pork and liver stew

Ingredients

Quantity Ingredient
1 tablespoon oil
2 teaspoons annatto seeds
1 tablespoon garlic, crushed
1 onion, finely chopped
2 tomatoes, sliced
500g pork, cut into 5 cm cubes
3 potatoes, diced
250g pork liver, finely diced
2 tablespoons salt
1/2 teaspoon freshly ground black pepper

Method

  1. Heat the oil in a large heavy-based saucepan over low heat. Add the annatto seeds and stir-fry for 1 minute, then lift out the seeds with a slotted spoon and discard.
  2. Add the garlic and onion to the coloured oil in the pan and cook until soft and golden. Add the tomato and cook until soft and pulpy, then add the pork, cover, and bring to the boil. Reduce the heat to low and simmer until the pork is tender. Add the potato — you may need to add a little stock or water at this point if there is very little liquid in the pan. Simmer until the potato is cooked through. Add the liver to the pan with the salt and pepper and bring back to the boil until the liver is cooked through. Serve hot.
