A curry of fresh cashews is one of the delights of Sinhalese cooking. Fresh cashews are not obtainable except in the country in which they are grown, but raw cashews, from health food shops and Asian grocery stores, make a very good substitute if soaked overnight in cold water.

Method

  1. Proceed as for elolu kiri hodhi (vegetable curry), but use 250 g raw cashews instead of the sliced vegetables. Simmer for about 30 minutes, or until the cashews are tender. Serve with rice and other accompaniments.
