Ingredients

Quantity Ingredient
3 slices bacon or cooked pork, trimmed and thinly sliced
60ml oil
250g lean beef steak, thinly sliced
250g raw small prawns, peeled and deveined
2 teaspoons salted soy bean paste
4 garlic cloves, crushed
1 teaspoon fresh ginger, finely grated
150g white chinese cabbage, shredded
4 spring onions, cut into 5 cm lengths
500g fresh wheat noodles, steamed for 15 minutes
2 tablespoons light soy sauce

Method

  1. Heat the oil in a wok or large heavy-based frying pan over medium heat. Add the bacon and cook for 1 minute, then add the beef, prawns, salted soy bean paste, garlic and ginger and stir-fry until the beef changes colour. Add the cabbage and spring onion and stir-fry for l minute, then add the noodles, soy sauce and 250 ml hot water. Cover and simmer for 5–8 minutes, tossing the noodles often, until all of the liquid is absorbed and the noodles are soft. Serve hot.
