Ingredients

Quantity Ingredient
1 quantity Sushi
500g sashimi-grade tuna or salmon, (see note)
2 teaspoons wasabi paste
pickled ginger, to serve

Method

  1. Prepare the sushi rice and reserve 2 tablespoons of the dressing, flavouring the sushi with the remainder.
  2. Cut the fish into very thin slices with a sharp knife, angling the knife so that the slices are larger than they would be if cut straight. Cover with plastic wrap and refrigerate until needed.
  3. In a bowl, combine the reserved sushi dressing with 2 tablespoons cold water and use it to moisten your hands before starting to shape the rice. Take a rounded tablespoon of sushi at a time and form each into a neat oval shape. They should be a little smaller than the slices of fish, so that the fish completely covers one side of the rice.
  4. In a bowl, combine the wasabi paste with 2 teaspoons cold water to make a dressing. Spread each slice of fish with a little wasabi dressing and put it, dressing side down, on the rice. Mould to a neat shape. Repeat with the remaining rice and fish. Arrange on a tray and serve garnished with the pickled ginger.

Note

  • Sashimi-grade tuna or salmon are prime cuts of very fresh fish. Snapper or bream may be used if it is very fresh and has never been frozen. Sushi can also be made with cooked prawns. You will need to peel and devein them and split them in half lengthways so they are butterflied before placing over the rice. If squid is used, cut the tubes into pieces just large enough to cover the mounds of rice. Blanch in boiling water for 1 minute. Drain, cool and place over the rice. Decorate with a strip of nori.
