Spicy fried cabbage

Ingredients

Quantity Ingredient
80ml oil
1 large onion, thinly sliced
2-3 fresh green or red chillies, seeded and sliced
2 garlic cloves, finely chopped
1 teaspoon fresh ginger, finely grated
1 teaspoon ground turmeric
1/2 head white cabbage, coarsely shredded
1 1/2 teaspoons salt, or to taste
2 tablespoons desiccated coconut

Method

  1. Heat the oil in a large saucepan over low heat. Add the onion and chilli and cook until the onion is soft. Add the garlic and ginger and stir-fry until golden. Add the turmeric and cabbage and stir-fry to combine, then cover and cook over low heat for 10–15 minutes or until the cabbage is tender. Sprinkle with the salt, add the coconut and stir well. Serve with rice and curries.
