Squid is one of the most subtle of sea foods and is best served with a light-flavoured vegetable. This dish combines it with tender young peas and a sauce that tastes of the sea.

Ingredients

Quantity Ingredient
500g small squid
2 tablespoons peanut oil
1/2 teaspoon fresh ginger, finely grated
210g frozen peas
125ml Yue sheung tong
or 125ml Gai sheung tong
1 teaspoon light soy sauce
1 tablespoon oyster sauce
2 teaspoons cornflour
Chow sahng choy, to serve

Method

  1. Clean each squid, removing the ink sac and discarding the head. Separate the tentacles from the body. Discard the tentacles. Rinse under cold running water to remove the skin. Drain well and cut the body lengthways into pieces. Use a sharp knife to score the pieces in a criss-cross pattern.
  2. Heat 1 tablespoon of the oil in a wok or large heavy-based frying pan over high heat. Add the ginger and squid and stir-fry for 2–3 minutes, or until the squid is opaque. Remove to a plate.
  3. Add the remaining peanut oil to the wok and toss the peas in it for a few seconds, then add the stock, soy sauce and oyster sauce and bring to the boil. In a small bowl, combine the cornflour and 1 tablespoon cold water to make a smooth paste, then add to the wok and stir constantly until the sauce thickens. Return the squid and stir to combine and heat through. Serve immediately on a bed of braised lettuce.
