Bread and butter pudding

My mother always used leftover bread from the previous day for this recipe. I learnt to cook a variation of this traditional dish when I was working at the Hilton and used to make it for my mother. Fresh bread is fine for this recipe, but bread and butter pudding is all about using leftover ingredients. If you have any, use leftover croissants, sliced roughly into 1 cm pieces, for a deliciously buttery pudding, or leftover cake.


Quantity Ingredient
1 1/2 cups sugar
1 tablespoon water
50g sugar
4 large eggs
1 teaspoon vanilla essence
or 2 tablespoons rum or baileys irish cream
300ml milk
300ml double cream
1/2 loaf sliced bread
80g softened butter
50g sultanas or frozen blueberries
sugar, for sprinkling


  1. Preheat the oven to 180°C.
  2. Place sugar and water in a pot over medium heat. Leave in the pan for 5–6 minutes until mixture has turned into a golden brown caramel. Take care not to burn or over-colour it – the sugar will taste burnt if you leave it colouring for too long.
  3. Pour the caramel into a 25 cm square ovenproof dish, to cover the bottom of the pan. Set aside.
  4. Cream the sugar and eggs together. Add vanilla or alcohol, mix well. Add milk and cream and stir through.
  5. Arrange half the bread in overlapping pieces in the dish on top of the caramel. Dab with a few pieces of soft butter. Add sultanas or blueberries. Arrange the rest of the bread in the dish. Pour the custard over the bread and push the bread down into the custard to soak. Sprinkle the top with sugar.
  6. Place a deep tray filled with water on the bottom shelf in the oven. Place the pudding in the oven and cook for 40–50 minutes. Remove and let stand for a few minutes before serving. Serve with ice cream or your favourite jam.


  • You can make this dish with bananas instead of sultanas or blueberries.

    For a richer mixture, use 2 large eggs and 2 egg yolks instead of 4 eggs.
