Ingredients

Quantity Ingredient
1/2 cup basil leaves
1/2 cup coriander leaves
1/4 cup unsalted peanuts
2 tablespoons tamari
1 tablespoon fresh ginger, grated
1 tablespoon red wine vinegar
2 garlic cloves, crushed
1 long red chilli, seeded and chopped
1 teaspoon water

Method

  1. Combine all the ingredients in a food processor or blender and process until a paste-like consistency is achieved.
  2. This pesto is particularly good tossed through hot Asian noodles, instead of through Italian pasta.
  3. Store, chilled, in an airtight container for about 1 week.

Variation

  • Use as a flavour base for Asian stir-fries – it is equally delicious with chicken, fish, meat and vegetables.
