Ingredients

Quantity Ingredient
4 potatoes, unpeeled and quartered
8 whole garlic cloves, unpeeled
spray oil
1/4 cup thyme, roughly chopped
1/4 cup rosemary, roughly chopped
1/4 cup oregano, roughly chopped
freshly ground black pepper

Method

  1. Preheat the oven to hot, 200ºC.
  2. Place potatoes in a baking pan, skin-side down. Scatter on the garlic cloves and spray with oil.
  3. Sprinkle with the herbs and pepper. Bake for 35–40 minutes until the potatoes are cooked through, golden brown and crisp.
