This dish is a great alternative to potato and makes a delicious accompaniment to many meals.

Ingredients

Quantity Ingredient
spray oil
500g celeriac, peeled and thinly sliced
500g potatoes, peeled and thinly sliced
1 1/2 cups reduced-fat tasty cheese, grated
1 cup salt-reduced vegetable stock
2 slices prosciutto, chopped
1 tablespoon rosemary leaves, chopped

Method

  1. Preheat the oven to moderately hot, 190ºC. Spray a 3 litre casserole dish with oil. Layer in the celeriac, potato and 3/4 of the cheese.
  2. Pour on the stock and sprinkle with the remaining cheese, prosciutto and rosemary.
  3. Bake, uncovered, for 40–45 minutes until tender and golden.
